Scottish butter cookies


400 g Organic Grano wheat flour Type W480 or
400 g Organic Grano wholemeal wheat flour 
300 g butter
250 g sugar

Knead flour, soft butter and sugar to a smooth dough. Make a ball and let it rest for at least half an hour in the refrigerator. Roll the dough into a 2 cm thick roll and cut it into 2 cm slices. Dust working surface and hands with flourdust. Take the dough slices and place them on a buttered baking tin and make a slight dent with your thumb. Preheat oven to 175oC and bake cookies for 20min until they are light brown.
